Grains and Flours From Our Own Fields
Our flour is ground fresh rather than milled months in advance and left sitting in a warehouse. Flour starts losing its aroma and nutrients from the day it is ground, which is why freshly ground atta smells sweet and shop flour smells of nothing.
Wheat
Khapali wheat (emmer wheat) is an ancient variety that almost disappeared from Indian farms. It is lower in gluten than modern wheat and has a nutty, heavier taste - many people who struggle with regular atta find it easier to digest. Lokwan wheat is the classic Maharashtrian wheat for soft, everyday chapati. We also stock Sihor wheat flour.
