Jaggery cubes in a bottle, cut small enough that one cube sweetens one cup of tea and you stop guessing with a knife. Gul in Marathi, gud or gur elsewhere, made at our own jaggery plant from cane grown on the farm at Kasarpimpalgaon.
The juice is boiled in open pans and set with no sulphur and no chemical whiteners. That is why these cubes are dark brown instead of the pale yellow blocks stacked in most shops. Dark is what jaggery looks like when nothing is added to lighten it. The taste is deeper, with a faint mineral edge off the cane.
How people use them
One cube stirred into chai or filter coffee. Two dropped into warm milk at night. Cooks keep the bottle beside the stove because a cube goes into amti, into a sabzi to round off tamarind, and into puran poli filling. Chikki, gul poli and til laddu all begin here, and at Sankrant the same jaggery ends up in til gul.
Pack sizes and storage
500g and 1kg bottles. Keep the lid tight. Real jaggery pulls moisture out of the air and softens during the monsoon, so a dry spoon and a cool shelf are all it asks for.
For cooking in quantity our jaggery powder dissolves faster, and the jaggery dhep is the old fashioned block. Everything sits under jaggery.

Is jaggery better than sugar
Both are sugar at the end of the day. Jaggery is unrefined, so it keeps the molasses and minerals from the cane and tastes quite different. Think of it as a change of flavour, not a free pass.
Why is your jaggery dark and not golden
Pale golden jaggery has usually had a whitening agent added while boiling. We add nothing, so the colour stays deep brown.
Do jaggery cubes dissolve in tea
Yes, a few seconds of stirring is enough. Add the cube once the tea is off the flame if you are boiling milk, since jaggery can split milk that is still bubbling.
