Kagzi limbu off our farm, thin skinned and heavy for their size, which is the one reliable sign that a lemon actually has juice in it. Nimbu that looks big and feels light is mostly rind. They often arrive with green still on the skin, because they have not sat in cold storage.
Our farmer members grow them on vermicompost, and nothing is waxed, so you can grate the zest straight off the peel.
A squeeze over varan bhaat, a wedge beside poha, limbu sarbat through April and May, and the peels into a jar of nimbu ka achar. Roll each fruit under your palm before cutting and you get more out of it.
Sold in packs of 3, 6 and 9 pieces. They keep a week on the counter, or a fortnight in a closed box in the fridge. Add them to your vegetable order, they pair with a batch of bhindi.

Colour follows temperature rather than ripeness. Fruit picked in warm weather stays partly green while being full of juice.
