Bhindi / Okra (Lady Finger)

Bhindi picked young, which is really the only thing that matters with okra. Snap the tip of a tender pod and it breaks with a small clean crack. If it bends instead, it stayed too long on the plant and no amount of cooking will take the string out of it.

Harvested small and delivered the next day, with no cold storage in between, so the ridges are still sharp and the tips have not blackened.

For bhindi masala or a dry bhaji, wipe the pods with a cloth rather than washing them, let them dry completely, then fry on a high flame and resist stirring. That is how the slime stays away. Bharli bhendi needs slightly bigger pods, so ask for those in your order notes.
