Indrayani rice, left unpolished, in a 1kg pack. This is the soft, faintly sticky rice that Pune households have eaten with varan and toop for decades. Leaving the bran partly on means the cooked grain comes out cream coloured, with an aroma the heavily polished version simply does not have.

Milling happens in small lots. Rice that has sat polished in a godown for a year still cooks, but it tastes of very little, and that gap is what most people notice on the first plate.

On the plate

Indrayani softens and clings together slightly, so it suits varan bhaat, dahi bhaat, taak bhaat and the plate of rice that closes a Maharashtrian meal. It soaks up amti well. For a pulao where every grain should stand apart, pick a firmer kolam instead.

Pack, water and storage

Sold as a single 1kg pack. Soak twenty minutes, then allow roughly two and a quarter cups of water per cup of rice, a touch more than polished rice asks for. Store it airtight, since grain with bran oil on it does not like a warm open shelf.

Frequently asked questions

Is unpolished rice better than polished rice

Unpolished rice keeps part of the bran, so there is more fibre and more flavour in it. Polished rice cooks faster and stores longer. They are milled to different degrees, that is the honest answer.

Does Indrayani rice need more water than basmati

A little more, yes. It is a short grain that swells rather than lengthens, so add about a quarter cup extra and give it another minute.

Why does unpolished rice look darker after cooking

The bran left on the grain colours both the water and the rice. It is the same variety, only nobody buffed it white.
