Pink guava, lal peru, that cuts open to a deep rose centre instead of the pale white of the common table sort. Ours ripen on the tree and leave Kasarpimpalgaon the same week they reach you, so the flesh is soft near the seeds and the skin still smells of guava when you lift it to your face.

No carbide, no ripening chamber, no cold storage. Fruit that is picked hard and gassed later looks identical from the outside and tastes of very little, and avoiding that is the whole reason we move ours quickly.

Slice it and eat with a pinch of salt and red chilli powder. The softer fruit blends into juice, the firmer ones go into peru chutney or a jam cooked down with jaggery. Slightly under ripe pieces are the ones to keep for chaat.

Available in 1kg, 2kg and 3kg. Leave on the counter to soften, then move to the fridge. More in seasonal fruit and in vegetables.
