Dhobli mirchi with thick green walls, cut from our fields while the stalk is still green and stiff. Press one with a thumb and the wall should push back. Shimla mirch that has spent time in cold storage softens at the shoulders first and the stalk browns off, which is the giveaway worth looking for.
Grown on vermicompost with no chemical fertilizer, so the sizes wander. Some come stubby, some come long. They cook the same.
Dice it for bharli mirchi masala, slice it into a quick bhaji with kanda and batata, throw strips in at the end of a pulao so they keep their bite, or roast and peel it for chutney. It also holds its shape well on a tawa with paneer.
