Bottle gourd picked small, each piece roughly 300g to 500g, which is the size at which dudhi still has soft seeds and thin skin. Lauki allowed to grow large on the vine turns fibrous and the seed bed hardens into something you end up cutting out and throwing away.
Grown by our own group of farmers on vermicompost, cut and packed the day before it comes to you, never held in cold storage.
Dudhi bhaji with a mustard and hing fodni takes ten minutes from start to plate. Grated, it goes into thalipeeth, into muthiya and into halwa cooked down with milk and jaggery. It also thickens a chana dal amti nicely. Taste a raw sliver before you cook, and if there is any bitterness throw the whole gourd out.
Sold as 1, 2 or 3 pieces. A whole gourd keeps a week in the fridge, and a cut piece should be covered and finished inside two days. Try dodka next, or see all fresh vegetables.
