Bajri kharodya, called bajra sandage in some houses, are sun dried bajra discs that villages make in the hot weeks just before the monsoon. Bajra is cooked down to a thick porridge with salt and chilli, spooned out in rounds onto a cloth, and left in the sun for days until the discs snap when bent.

Ours are made in small batches by women from our farmer group, using bajra off the same fields and nothing besides salt, chilli and water. No colour, no preservative, no factory dryer.

Fry them for fifteen seconds and they puff up crisp. They belong next to dal rice, alongside a plate of khichdi, or with curd rice on a hot afternoon. You can also roast them on a tawa with a smear of oil if frying is not on the menu.

Sold as a 1kg pack. An airtight tin away from steam keeps them crunchy for months.
